After reading the nutrition facts on the store-bought breakfast sausage that we usually eat, I decided to try to make my own. We both enjoy this sausage, and I hope that you do too!
Place meats in a medium mixing bowl and top with spices. Using your hands, combine well.
Form into 8 patties. I use a digital kitchen scale and measure out 4 oz each.
If cooking immediately, let sit for at least 10 minutes to let flavors meld. If cooking later, wrap each patty in saran wrap and freeze. Thaw before cooking.
In a small skillet, cook patty at medium heat for about 5 minutes. Flip and cook about 5 minutes more. Accurate time depends on how thick your patties are. Cook until centers are no longer pink.
