You wouldn’t think that there could be a recipe out there for sugar cookies, that are Keto friendly, right? These are delicious!
Preheat oven to 325°F. Line two baking sheets with parchment paper.
Whisk together the flours, baking powder and salt. Set aside.
In a large bowl, mix the butter and sugar substitute until well combined. Then, add the egg and extract.
Combine the two mixes until the dough comes together.
Roll the dough into 1-inch balls and place 2” apart on baking sheets. Press the balls down to about ½” thick.
Bake for 12 minutes, or until just slightly firmed.
Remove from oven and let cool on pan while you prepare the topping
Whisk together topping ingredients. Using a teaspoon, pour some topping over the cookies and spread with the back of the spoon. Allow to dry completely before storing.
Makes 30 cookies, two cookies per serving
