These Keto Cheese Crackers are a big hit in my family, both with those who are dieting, and those who aren’t! They are a great go-to snack food where you would usually reach for “bad” crackers. I hope that you enjoy these as much as we do!
Preheat oven to 450 degrees F.
Mix the cheeses and the almond flour in a microwave safe bowl and cook on high for 1 minute.
Immediately stir the ingredients until the almond flour and cheeses have combined fully. You want the cheese to be partially melted. Allow this to cool slightly, towards room temperature
Add the salt and seasonings, stir, and then add the egg. Mix until fully combined.
(Reheat for 20 seconds if the mixture is too hard to stir.)
Place ball of dough on a large sheet of parchment paper and cover with another sheet. Use your hands or a rolling pin to spread the dough into an even, thin layer. Use a ruler and a pizza cutter to cut the crackers into about 1” square.
Bake each side (flip once) for about 8 minutes, longer if you want them crispier. Be careful that they don’t get too burnt. Allow to cool for about 5 minutes, and enjoy!
